For my birthday dinner I made Witches Stew! It’s an easy dinner that you can just throw into a pot and let cook for a couple of hours.

For my birthday, I wanted something other than cake. The weather was pretty chilly that day, so I thought a soup or stew would be the perfect thing. This stew had the perfect amount of seasoning, but the steak could use more salt and pepper.

 

Ingredients:

3 lbs beef round steak, cubed
3 tbsp butter
2 tbsp flour
Salt and pepper to taste
16 oz beef broth
2 cups red wine
8 oz can tomato sauce
2 tbsp Worcestershire sauce
6-8 medium potatoes, peeled and quartered (cut the quarters in half if they seem too big)
6-8 celery stalks, chopped
1 large onion, chopped
10-12 mushrooms, sliced
2 cloves garlic, pressed
2 tsp thyme
2-3 sprigs of rosemary

 

Instructions:

  • In a Dutch oven over medium heat, brown beef in butter with salt and pepper to taste.
  • In a Dutch oven over medium heat, brown beef in butter with salt and pepper to taste.
  • When all sides are browned, add flour, stirring until beef is coated.
  • Add beef broth, wine, tomato sauce, and Worcestershire sauce. Cover and let simmer for 1 hour.
  • Add the rest of the ingredients (add more water or wine for a richer flavor) and let simmer for another 1 ½ hours.
  • Remove rosemary stems and serve with fresh parsley, bacon bits, and some bread.
